Holiday Salad

Holiday Salad

Simple light side dish for the holidays, a delightfully delicious salad. Most holiday meals focus on carbs and protein, but it is always nice to have a light dish before hand or as an option for guests. This salad and dressing is easy to assemble with easy to find ingredients. Most importantly, it is  good.




Ingredients:

  • 1 Large Head of Lettuce
  • 1 pack of Grape tomatoes
  • 1 container (6-12 oz) Feta Cheese
  • 1/2 cup Dried Cranberries
  • 1/2 cup Chopped Walnuts or Pecans
  • 1/2 cup Vegetable or Olive Oil
  • 1/2 cup Balsamic or Red Wine Vinegar
  • 2-3 Tablespoons of Fresh squeezed Lemon Juice
Directions:

  1. Chop the lettuce, place in a large pot and fill with water, let sit for 30 minutes. Drain the water, dry the lettuce (this can be done the day before, just store the lettuce in the container or bowl being used for the salad in the fridge overnight).
  2. Wash the tomatoes by running water over them. Let remaining water drain on a kitchen towel that has ben folded.
  3. Place the dried lettuce, tomatoes, Feta Cheese, Cranberries, and Walnuts into a large salad bowl and toss together.
  4. In a small bowl, mix the Oil, Vinegar, and Lemon Juice using a fork until blended together. Pour over the salad and toss together before serving.
This goes great with the classic holiday meal of turkey, stuffing, sweet potatoes, and more. Merry. Christmas!!!
