Everyone ends up staring at leftovers the day after a holiday or the day after that and going, "wow... that's a lot of food." By the third day, the joy of leftovers is probably starting to get old and the family is considering going out to eat. However, instead of eating the same multiple dishes day after day for nearly a week, turn those leftovers into an amazingly good casserole that will make everyone feel like they are eating something new, not leftover.
Ingredients:
- 2 cups Cooked Turkey, shredded or broken into pieces
- 1 1/2 cups dried rolls, crumbled
- 1 cup mashed potatoes
- 1-2 cups stuffing, crumbled
- 1/2 cup sweet potatoes (if not available or do want to use, use 1 1/2 cups mashed potatoes)
- 1/2 cup cranberry sauce
- 1/4 stick butter, melted, plus 1/4 stick butter for the baking dish
- Gravy, reheated stove top or in the microwave
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- Mix the turkey, stuffing, and cranberry sauce in a medium bowl, set aside.
- Mix the sweet and mashed potatoes in a separate bowl.
- Butter a baking dish with 1/4 stick butter.
- Spread the turkey, cranberry, stuffing mix into the dish.
- Spread the potatoes over top.
- Sprinkle with the dried bread crumbs.
- Cook for 30 minutes. Pour the melted butter on top of the cracker crumbs, bake another 15-20 minutes.
- Let cool 5-10 minutes, serve with reheated gravy.
