Eating even somewhat healthy during the holiday season is near impossible, but with this cranberry tuna salad, it is possible. Simple to put together, can be used for sandwiches, as a dip, or eaten by itself. The best part, on some good bread, it taste like a delicious Thanksgiving turkey sandwich made from leftovers.
Ingredients:
- 2 cans tuna in water, drained
- 3/4-1 cup whole berry cranberry sauce
- 1/4 cup mayonnaise
- 1 Tablespoon yellow mustard
- 1/2 teaspoon salt
- 1/4 cup finely chopped Gala or Honey Crisp Apples, washed and dried (optional)
- 3 Tablespoons finely chopped walnuts (optional)
Mix all ingredients together in a medium bowl with a fork, until well blended. Cover with plastic wrap, place in the refrigerator for 2 hours or overnight to chill. Serve on bread or as a dip on cracker or Tortilla Chips.
