Tuna Cranberry Salad

Cranberry Tuna Salad

Eating even somewhat healthy during the holiday season is near impossible, but with this cranberry tuna salad, it is possible. Simple to put together, can be used for sandwiches, as a dip, or eaten by itself. The best part, on some good bread, it taste like a delicious Thanksgiving turkey sandwich made from leftovers.


Ingredients:

  • 2 cans tuna in water, drained
  • 3/4-1 cup whole berry cranberry sauce
  • 1/4 cup mayonnaise
  • 1 Tablespoon yellow mustard
  • 1/2 teaspoon salt
  • 1/4 cup finely chopped Gala or Honey Crisp Apples, washed and dried (optional)
  • 3 Tablespoons finely chopped walnuts (optional)
Directions:

Mix all ingredients together in a medium bowl with a fork, until well blended. Cover with plastic wrap, place in the refrigerator for 2 hours or overnight to chill. Serve on bread or as a dip on cracker or Tortilla Chips.
